Interest in wine science has grown enormously over the last two decades as the health benefits of moderate wine consumption have become firmly established in preventing heart disease, stroke, cancer and dementia. The growth of molecular biology has allowed proper investigation of grapevine identity and lineage and led to improvements in the winemaking process. Wine: A Scientific Exploration delves into the history and appreciation of wine, its early role as a medicine, and modern evidence on how and why wine protects against disease. It also addresses genetic modification of the grapevine, long recognized as a natural process, and the microbes involved in the making of wine. Contents 1. Drinking Wine 2. The History of Wine as a Medicine 3. Wine in Archaeology 4. Phylloxera 5. Wine and Heart Disease: A Statistical Approach 6. Biological and Biochemical Actions of Resveratrol 7. Wine, Alcohol and Cardiovascular Diseases 8. Polyphenols in Red and White Wines: A Joint Venture Between Hydrated Electrons and Protons 9. Grape and Wine Flavonoids and Stilbenes 10. A rigorous, comprehensive introduction to soil chemistry, this text is aimed at students and researchers who are not soil chemists. The author describes soil minerals and organic matter in soils and the soil solution, and provides in-depth coverage of important chemical processes, including solubility reactions, oxidation-reduction phenomena, adsorption, and ion exchange. The three final chapters present detailed applications to soil-plant relationships, fertilizer reactions in soils, acidity, salinity, mineral weathering, and soil management. Over 200 problems at varying levels of difficulty are coordinated with the text, and an appendix on SI units summarizes their use in soil chemistry.

This book describes the development of cost effective abatement strategies aimed at the control of air pollutant emissions in Europe, with a focus on ground level ozone. The author starts with the air pollution status quo in the late 1990s, discussing the impacts of photooxidant concentrations in the context of other air pollution related effects. Emission sources are then analysed in detail, deriving a scenario for a business-as-usual development of ozone precursor emissions. From a cost-benefit perspective, it is shown that only an integrated assessment of all air pollutants and their effects can achieve a full accounting that reflects synergies and hidden benefits. The modelling scheme identifies emission targets required to achieve compliance with EU thresholds, and calculations reveal the need to review established ozone thresholds and emission limits, in particular in view of the accession of Central and Eastern European nations and the resulting geographic extension.
