It is, above all, to participate in the symbolic celebration of the shared repast.” – Ginette Olivesi-Lorenzi, as quoted by Coleman Andrews Is there anyone who does not love food? If your answer is yes, then chances are you probably are not reading this cookbook anyway and by not doing that you are missing out on the travelling experience of a lifetime. Yes, travelling. No, we are not out of our mind and yes, food and travel are related. So many of us travel to see different places, but how many of us take the time out to savour the specialties of the place? If we did, we would find that each place, area, zone, sector (call it what you will) has at least one signature dish to offer; One delicacy that is made nowhere else in the world except there. The dish probably has a legend attached to it. Its ingredients, both cultural and otherwise, are seeped in the uniqueness of the region. Food is one of the biggest cultural identities that transcends boundaries to join people together. Look at the world map. From the Americas to Asia, you will find myriad differences and you will also recognise similarities between the ingredients used, the methods adopted and of course presentation. Of course, the one base ingredient that is common to all the cuisines in the world. It is an invisible thread – just like the Tropic of Cancer or Capricorn – it is the love for food. This year, our cookbook is an ode to that invisible bond that binds cultures and worlds together. We take you through the cuisines of the world, from India to Thailand, and France to Mexico. We hope you enjoy this virtual journey and we hope they inspire you to become a food traveller, like us…
